I was looking at a house up for sale on the sheriffs sale. On the day of the sale, I called to find out it had been taken off the list. Will it be put back on at a later date?
Possibly - it would depend on why the home was taken off the list.
Are the prices for the houses listed for the Sheriff's sale what is owed yet on the property and the taxes? Do people just walk away from the house scott free?
After missing 3 months of mortgage payments, the bank forecloses and the property ends up on the Sheriff Sale list.  The prices shown on the Sheriff Sale list is the amount owed to the Bank only.  On the day of the sale the bank bids first, then anyone can outbid the bank.
How do we find the homes up for Sheriff sales? And do you put a sign in front of the house?
Current Sheriff Sale lists are published in the newspaper and on this site.  No there are no signs placed on the property by the Sheriff's department.

How do you know if the home owner was able to pay the amount owed prior to the sale? (Thus the house would no longer be available on the sale date.)

What exactly is the amount given on the Sheriff sale list? Is there a set price at which bidding will start?
The amount value is the amount of money owed to the bank on the property.  The bank will bid first on the property and that will set the initial price.
Do more houses get added to the list on dates that the website already has posted? For example, you have dates in May already up. Are there more submissions pending? Finally, what is the deadline for a submission to be added to the list for a sale?
Once the listings are posted on the website and published in the newspaper there are no additions.  The deadline for a submission to be added to the list is governed by publishing requirements, please call the Sheriff's Civil Office for further information.
After the bank bids on property, is there a certain dollar increment one needs to bid over the bank amount?
One must bid $1.00 over the bank amount unless there is competitive bidding (more than one person bidding on the property).  If more than one person is bidding in the property, then $100.00 dollar increments are used.

I'm trying to determine how many Sheriff sales occurred in 2007. Is that figure posted anywhere on this site?

What happens to properties that do not sell on the sell date?
Since the "bank" places the first bid, if no one else bids on the property, it will default to them.
